Executive Chef Marc Schulz
The Hotel Welcomes a New Executive Chef
The newest member of the culinary team at The Hotel at Auburn University, Chef Marc Schulz joins us as Executive Chef of Ariccia, Piccolo and the hotel. As the Executive Chef, Schulz will oversee all culinary concepts and operations including creating new seasonal menus, the hiring and training of all the chefs, cooks, and other members of the culinary team, as well as contributing to the growth of the hotel, Ariccia and Piccolo. Chef Schulz brings years of international culinary experience, leadership, and fresh ideas to Auburn.
A native German, Chef Schulz joins The Hotel at Auburn University from one of our sister Capella hotels, Hotel Breidenbacher in Duesseldorf, Germany, where he was the former Sous Chef. Schulz’s background also includes experiences at some of Europe’s other finer restaurants and hotels including Head Chef at Romantik Waldhotel Mangold in Bergisch Gladbach, Germany, and Chef de Partie and Sous Chef at Restaurant “le cheval blanc” part of the Gut Mydlinghoven Hotel in Duesseldorf, Germany.
Chef Leo Named Chef of the Year!
The Alabama Hotel and Lodging Association's Stars of the Industry awarded Catering and special events Chef Leonardo Maurelli Chef of the Year on October 24, 2011.
Maurelli has served as the catering and special event chef of the hotel since August 2009. His love of food and cooking can be seen in the numerous special events he organizes for The Hotel at Auburn University throughout the year. He often works closely with local craft brewers to develop unique menus for weekly craft beer dinners and for the hotel's signature events - AprilFest and Oktoberfest.

Our Tour d’ Italia cooking classes are a perfect way to indulge your inner chef!
Classes are held monthly in our private dining room in Ariccia. Guests will be instructed by our very own Chef Leo on how to create traditional Italian dishes from different regions in Italy. Classes are $100 and include your meal and wine for the evening. Guests will also leave with a basket containing homemade sauces and pasta.

Helpful kitchen tip from the Ariccia Chefs
Stop the Sticking
Keep your foods from sticking to utensils by spraying them with cooking spray. Your knife will slide through a hard boiled egg with less mess, and your friend egg will slip off the spatula onto your plate with no fuss.
